Skippy® Peanut Butter & Jelly Cups

A quick & deliciously easy recipe for Peanut Butter lovers.  Salty peanut butter with oozing strawberry jelly – what’s not to love!

Makes 12

Prep time:  10 minutes

Chilling time: 20 minutes

Ingredients

340g Skippy® Creamy Peanut Butter

50g coconut oil, melted

1 tbsp honey

75g strawberry jam

Method

1.    Line a muffin tin with 12 cupcake cases.

2.    Place the peanut butter, coconut oil and honey into a blender and blitz until the peanut butter is smooth and creamy.

3.    Now divide the peanut butter between the cupcake cases.

4.    Heat the jam in the microwave for 30-45 seconds until runny and drizzle on top of the peanut butter.  Use a toothpick to swirl the jam through the peanut butter.

5.    Place the muffin tin into the freezer for 15-20 minutes or until hardened.  Store in an airtight container in the fridge or freezer.  If frozen let sit in room temperature for 5 minutes.  Enjoy!

This SKIPPY® Peanut butter Chocolate Bark is the perfect treat for Halloween.  It is super quick and easy to make.  Let’s the kids get creative with their favourite spooky treats.

Ingredients

400g milk chocolate

125g SKIPPY® smooth peanut butter

Halloween Candy, to decorate

Preparation method

1.    Melt the chocolate in a bowl set over a pan of simmering water. Line a baking sheet with greaseproof paper and pour the chocolate over.

2.    Place the peanut butter in a bowl and microwave for 15-30 seconds until softened.  Then dollop over the unset chocolate, using a skewer swirl the peanut butter so it creates a pattern.

3.    Sprinkle over the Halloween candy and place in the refrigerator for over an hour until set.

4.    Break into shards to serve.  Happy Halloween!

Skippy® Peanut Butter & Jelly Pancakes

These light and fluffy peanut butter pancakes drizzled with peanut butter and jelly taste absolutely delicious.  The favourite, classic sandwich turned into the tastiest breakfast treat!

Serves 4

Prep time:  10 minutes

Cooking time: 20 minutes

Ingredients

For the pancakes

200g plain flour

30g caster sugar

½ tsp bicarbonate of soda

1 tsp baking powder

50g butter, plus extra for frying

100g Skippy® Creamy Peanut Butter

2 free range eggs

400ml whole milk

To serve

100g Skippy® Creamy Peanut Butter

100g strawberry jam

Fresh Strawberries

Method

1.    In a large bowl add the plain flour, caster sugar, bicarbonate of soda and the baking powder, mix through and make sure there are no lumps.

2.    In another bowl melt the butter in the microwave for 30-60 seconds and add the Skippy® peanut butter, whisk until smooth.  Now add the eggs and mix through the milk.

3.    Now gradually add the milk mixture to the flour mixture and whisk until you have a smooth batter.

4.    Heat a frying pan over a medium heat and brush with melted butter.  Working in batches pour a ladle of batter onto the pan and cook for 2-3 minutes on each side until set and golden. Set aside on warmed plates.

5.    Meanwhile, place the Skippy® peanut butter and jam in separate bowls and microwave for 30-60 seconds until melted and able to drizzle.

6.    Drizzle the Skippy® peanut butter and jam over the pancakes, top with strawberries and serve immediately. Enjoy!

This quick & easy hummus is made from Skippy® Peanut Butter, chickpeas, lemon and cumin.  This dip is so tasty and a great addition to any picnic, party or snack!

Serves 4-6

Prep time: 10 minutes

Ingredients

3tbsp Skippy® Creamy Peanut Butter

1 x 400g tin of chickpeas

1 lemon, juice only

2 tsp ground cumin

1 clove of garlic, peeled & finely chopped

2 tbsp olive oil

4-6 tbsp water

Ground sea salt

1 tbsp salted peanuts, chopped

¼ tsp smoked paprika

To Serve

Cucumbers, carrots, celery, flatbread or crackers

Method

1.    In a small bowl add the Skippy® peanut butter, place in the microwave for 20 seconds.

2.    Place the slightly melted peanut butter in a food processor with the chickpeas, lemon juice, cumin, garlic and olive oil.  With the food processor running slowly drizzle in the water until smooth and you have your desired consistency.  Season to taste.

3.    Place in a serving bowl and sprinkle with peanuts, smoked paprika and a drizzle of olive oil.  Serve with vegetables or breads.

A quick & deliciously easy recipe for Peanut Butter lovers – the perfect treat for Valentine’s Day

Serves 14

Prep time:  5 minutes (chill time, 1 hour 30 minutes)

Melting time: 5 minutes

Ingredients

125g Skippy® Creamy Peanut Butter

60g unsalted butter, melted

120g-150g icing sugar, sieved

300g milk chocolate, melted

Method

1.    In a large bowl add the Skippy® peanut butter, melted butter and 100g of icing sugar, mix thoroughly.  Add more icing sugar until it is the consistency of cookie dough.

2.    Place the dough between two sheets of greaseproof paper and roll out until it is about 0.8- 0.9mm thick.  Now place in the freezer for 15 minutes.

3.    Remove from the freezer and using a heart cutter, cut the hearts and set a side on a new piece of greaseproof paper and place back in the freezer for another 15 minutes.

4.    Place the melted chocolate in a large bowl and dip the peanut heart into the chocolate until it is fully coated.  Remove with a fork and remove all excess chocolate and place on greaseproof paper.  Repeat until all hearts are covered and allow the chocolate to set for an hour in room temperature.  Enjoy!

SKIPPY® Peanut Butter & Jelly Sandwich Cookies

These SKIPPY® Peanut butter & Jelly Sandwich Cookies are absolutely delicious.  A perfect treat for all the family!

Serves 8

Prep time:  15 minutes

Cooking time:  10 minutes

Ingredients

110g butter, cubed

100g light brown sugar

50g granulated sugar

140g SKIPPY® extra smooth peanut butter

1 egg

1tsp vanilla extract

160g plain flour

Pinch of salt

1tsp bicarbonate of soda

For the peanut butter cream

3 tbsp unsalted butter, softened

60g SKIPPY® extra smooth peanut butter

200gicing sugar

1-2 tsp double cream

Strawberry jam

Preparation method

1.    Preheat the oven to 175°C/155°C Fan/Gas mark 4.

2.    Add the butter and both sugars to a stand mixer and mix until light and fluffy, about 3 minutes.  Now add the peanut butter and mix for 1-2 minutes.

3.    Add the egg and vanilla extract, mix until fully combined.

4.    In a small bowl combine the flour, salt and bicarbonate of soda.  Now add to the mixer and mix on a low speed for less than a minute. 

5.    Divide the cookie dough into 16 cookies and place on a baking tray.  Bake in the oven for 10 minutes until lightly golden and firm on the edges.

6.    Meanwhile make the buttercream; cream the butter and peanut butter in your mixer until smooth and creamy 2-3 minutes.  Now add the icing sugar and cream, set aside.

7.    Remove the cookies from the oven and set aside for 3-4 minutes.  Transfer to a cooling rack until completely cooled.

8.    Once cool frost half of the cookies with the peanut butter buttercream, spread the jam onto the other cookies.  Sandwich the jam and peanut butter cookies together.  Enjoy!

Serves 20

Prep time:  5 minutes (plus chilling time)

Cooking time:  10 minutes

Ingredients

125g butter, cubed

110g caster sugar

80ml golden syrup

100g SKIPPY® extra crunchy peanut butter

160g cornflakes, crushed

350g milk chocolate

Preparation method

1.    Grease a 20cm x 30cm baking tray.

2.    Add the butter, sugar, syrup, and peanut butter to a large pan.  Melt all the ingredients on a low heat until the sugar dissolves.  Bring to the boil and allow to simmer over a low heat for 5 minutes without stirring.

3.    Now add the cornflakes and mix thoroughly.  Spread the mixture into the baking tray, press firmly and refrigerate for 30 minutes.

4.    Melt the chocolate in a small bowl over a simmering pan of water (don’t let the water touch the base of the bowl) or in the microwave, until smooth.  Spread the chocolate over the peanut butter crunch, stand at room temperature until set before cutting.  Enjoy.
