Skippy® Peanut Butter Hummus



Skippy® Peanut Butter Hummus
This quick & easy hummus is made from Skippy® Peanut Butter, chickpeas, lemon and cumin.  This dip is so tasty and a great addition to any picnic, party or snack!
Serves 4-6
Prep time: 10 minutes

Ingredients
3tbsp Skippy® Creamy Peanut Butter
1 x 400g tin of chickpeas
1 lemon, juice only
2 tsp ground cumin
1 clove of garlic, peeled & finely chopped
2 tbsp olive oil
4-6 tbsp water
Ground sea salt
1 tbsp salted peanuts, chopped
¼ tsp smoked paprika

To Serve
Cucumbers, carrots, celery, flatbread or crackers



Method

1.    In a small bowl add the Skippy® peanut butter, place in the microwave for 20 seconds.
2.    Place the slightly melted peanut butter in a food processor with the chickpeas, lemon juice, cumin, garlic and olive oil.  With the food processor running slowly drizzle in the water until smooth and you have your desired consistency.  Season to taste.
3.    Place in a serving bowl and sprinkle with peanuts, smoked paprika and a drizzle of olive oil.  Serve with vegetables or breads.
